I'm just using the "wolf gray" terminology from Siberian Husky coat colors, actually. Wolf gray dogs are genetically agouti, just as the term "sable" is used to describe genetically agouti GSDs. It's just different descriptions for the same thing. For the particular pup I'm describing, he's a silver sable fade. I figured that choosing to describe him as "wolf gray" might draw more people to click on him and take a look than if I just called him a silver sable fade. So it's just an advertising strategy. But anyway. They're the same thing. :)
